Vakilichi bhaji is a traditional Maharashtrian recipe. The main ingredient in the recipe is besan or chick pea flour. You don’t need to use Eno fruit salt or baking soda. It tastes just awesome. Ingredients

  • 1/2 cup Besan
  • 1/4 tsp Coriander powder
  • 1/4 tsp Red chili powder
  • Cumin powder
  • Turmeric powder
  • Salt to taste
  • 1/2 cup Water
  • Lemon juice
  • 1 tsp Oil
  • A pinch of Hing
  • Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • Curry leaves
  • Finely chopped Coriander leaves
  • Fresh shredded Coconut

Instructions

  • Take besan in a bowl.
  • Add coriander powder, red chili powder, cumin powder, turmeric powder, salt and mix everything well together.
  • Add a little water at a time to make smooth batter. No lumps of besan should be formed.
  • Add lemon juice and mix well.
  • You can add chat masala or amchoor powder in place of lemon juice.
  • Heat up oil in a pan.
  • Add hing and pour the batter.
  • Mix quickly so that no lumps will be formed.
  • Cook it stirring continuously.
  • When it comes together nicely, cover and steam on low heat for about 7-8 minutes.  
  • Remove the lid and mix it once more.
  • Cover and rest for about 5-7 minutes.
  • Take chakali mould and fit fine shev dish in it.
  • When ukad cools down a little transfer it into chakali mould.
  • Roll kurdai like shev from the chakali mould.
  • Heat up oil in a tadka pan.
  • Add mustard seeds, cumin seeds, curry leaves and mix well.
  • Add this tadka on each shev roll.
  • Garnish with coriander leaves and fresh coconut.
  • Vakilichi bhaji is all ready.
