Mangalorain Paneer ghee roast as name suggests is a Mangalorain recipe. This is a nice option for those who don’t have non veg. You can serve this as a party starter as it is dry. You can call this as vegetarian variation of chicken or mutton ghee roast. Paneer is roasted in ghee that gives nice aroma and taste to the dish. It is spicy, tangy and pungent too. It tastes just awesome and easy to make. We already have seen many paneer recipes like palak paneer, paneer angara, matar paneer, butter paneer, panner biryani etc.

The freshly roasted and ground spices add a new and different flavor and aroma to the dish. If you make fresh masala while making any recipe it takes the recipe to an altogether new level of taste. Also while frying paneer in ghee make sure you fry it on high heat and for just 3-4 minutes. If you fry paneer longer it will be chewy.

Ingredients

  • 1 tbsp Coriander seeds
  • 1/2 tbsp Cumin seeds
  • 9~10 Black pepper corns
  • 4~5 Cloves
  • 1/2 tsp Fennel seeds
  • Dry red chilies
  • 1/4 tsp Fenugreek seeds
  • 4~5 Garlic cloves
  • A piece of Ginger
  • Tamarind pulp
  • A little Water
  • 2~3 tsp Ghee
  • 250 gm Paneer cubes
  • Finely chopped Onion
  • 2 tsp Curd
  • Jaggery / Gudh
  • Curry leaves
  • Salt to taste
  • A little Water
  •  
  • 1/4 cup Water
  • Oil

Instructions

Step 1. Heat up a pan on medium heat and add coriander seeds, cumin seeds, black pepper corns, cloves, fennel seeds, dry red chilies.

Step 2.Roast everything together on medium heat until nice aroma is released from it for about 3-4 minutes.

Step 3. Turn off the gas and add fenugreek seeds.

Step 4. Mix well and let it cool down.

Step 5. Transfer the mixture into a blender jar and add garlic, ginger, tamarind pulp.

Step 6. Add a little water and blend everything together into smooth paste. Fresh masala is ready.

Step 7. Heat up a pan on medium heat and add ghee.

Heat up ghee.

Step 8.When ghee melts add paneer cubes.

Step 9. Fry paneer cubes on high heat for just 3-4 minutes from all sides.

Step 10. Take the paneer out into a dish.

Step 11. In the same pan add onion and fry until it turn nice golden.

Step 12. Add the fresh blended masala and fry everything together until it releases oil for about 3-4 minutes.

Step 13.When the masala begins to release oil add curd and fry for another 2-3 minutes.

Step 14.Add gudh, curry leaves, salt, water to adjust the consistency and mix well.

Step 15. Cook the gravy for another 3-4 minutes.

Step 16.Add paneer cubes and toss it well.

Add paneer & mix well.

Step 17. When paneer gets nice coating of masala cook it for just 2 minutes more.

Step 18.  Turn off the gas and paneer ghee roast is all ready.

Notes

  1. You can use dalda in place of ghee. 
  2. Roast panner on high heat and for just 3-4 minutes.
