This is an easy sandwich made with paneer or Indian cottage cheese.  Kids love paneer. So this is a good option for their lunch or tiffin box. This is quick, easy and yet nutritious recipe. Let’s learn to make paneer sandwich.

Ingredients

  • 125 gms Paneer
  • 1/2 deseeded and finely chopped Tomato
  • Finely chopped onion
  • Finely chopped Coriander leaves
  • Chili flakes (Optional)
  • Mixed herbs
  • Black pepper powder
  • Salt to taste
  • White Bread slices
  • Pizza sauce / Tomato ketchup

Instructions

  • In a bowl take paneer and crumble it. You can grate it if you want.
  • Add tomato, onion, coriander, chili flakes (Optional), mixed herbs, some black pepper powder and salt to taste. Mix well.
  • You can add veggies of your choice like green or red bell pepper, shredded carrot etc. 
  • Paneer stuffing is ready.
  • Take white bread slices. You can take bread of your choice like whole wheat or multi grain bread.
  • Spread pizza sauce or tomato sauce over it. You can also use mint chutney instead of pizza sauce.
  • Stuff up the paneer filling. Cover with another bread slice.
  • Butter up one side of sandwich and put the buttered side down in the griddle pan.
  • Grill the sandwich until it gets deep golden color.
  • Spread some butter over other side of sandwich and
  • flip over. Grill from other side as well until it gets deep golden color.
  • Take it out into a dish and cut it in half.
  • While packing the tiffin give some sliced carrot and some chutney.
  • For chutney make paste of mint leaves, coriander leaves, garlic and a little green chili. Add Greek yogurt and salt.
  • Sandwich goes well with this dip.
  • Pack some almonds and raisins along with it too. 
  • Lunch box is ready.
