Ingredients

  • Chopped Red pumpkin
  • Salt to taste
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • 1 tsp Red chili powder
  • Finely chopped Coriander leaves
  • Shredded fresh Coconut
  • 10-12 Curry leaves
  • 1 tsp Oil
  • 1 tbsp Water

Instructions

  • Peel the red pumpkin and chop it into small pieces.
  • Heat up oil in a pan.
  • Add mustard seeds and let them pop up.
  • Add cumin seeds and let them splutter.
  • Add hing, curry leaves and turn off the gas.
  • Add red chili powder and mix well.
  • Turn off the gas so that red chili powder won’t be over roasted.
  • Turn on the gas and add pumpkin. Mix well.
  • Add salt and mix well.
  • Salt helps in releasing moisture from pumpkin.
  • Add water and mix well.
  • Cover and steam pumpkin on medium heat for about 5-6 minutes.
  • Remove the lid and mix well once.
  • Add fresh coconut, coriander leaves and mix well.
  • You can add roasted peanut powder instead of fresh coconut.
  • Fry for just about a minute.
  • Turn off the gas and lal bhopalyachi bhaji is already.
  • It goes well with chapatti.
  • You can serve it with rice as side dish.
