Ingredients

  • 1 cup Sugar
  • 1/4 cup Water
  • 1/2 tsp Eno fruit salt
  • A drop of Rose essence
  • Red food color

Instructions

  • Grease katori or dish well with ghee.
  • Keep a thread in it to make gathi garland and keep it aside.
  • Heat up a sauce pan.
  • Add sugar and water.
  • Mix well and cook the syrup on low heat until all the sugar is dissolved and the mixture comes to boil for about 3-4 minutes.
  • Stir the mixture continuously until all the sugar is dissolved.
  • If you do this process on high heat then the syrup will be ready before the sugar is dissolved and you will find the sugar crystals in the syrup.
  • When all the sugar is dissolved, increase the heat to medium.
  • Continue to cook for just 2 minutes more.
  • We want very thick syrup.
  • After transferring a little syrup on a dish and when it cools down a little it should look like a dew drop. It means the syrup is ready.
  • Do not cook syrup longer after this point.
  • Add eno and mix well. You can use baking soda instead of eno.
  • Add rose essence and mix well.
  • Add food color and mix well.
  • Turn off the gas and the process after this should be followed really quickly.
  • Transfer the syrup into dish or mould or katori.
  • Let it cool down for about 15-20 minutes.
  • Slide the gathi carefully with hand if you have made in steel dish.
  • Take gathi out and these are ready.
  • You can make 2 good sized garlands from 1 cup sugar.

Notes

  • Use a deep pan to make syrup. As the syrup is ready it dries quickly. To avoid that and too keep syrup hot longer try to use deep pot to make syrup.
  • Eno gives nice porous texture to gathi. It helps to make gathi crispy and syrup transparent.
