Karanji is an all time favorite recipe. We already have seen two karanji recipes, karanji and khasta karanji. Today we are making rava karanji which is a savoury recipe. This is a really easy and simple recipe. These become nice and crispy. These remain crispy longer time. You can try this recipe at home and drop a comment for me. Ingredients

  • 1 cup fine Rava / Sooji
  • Salt to taste
  • 1 tsp Oil
  • 2 tsp Maida
  • Water
  • 2 boiled, mashed Potatoes
  • 1/2 tsp Red chili powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Garam masala
  • 1/4 tsp Cumin powder
  • 1/4 tsp Chat masala
  • Salt to taste
  • Finely chopped Coriander leaves
  • Oil for frying

Instructions

  • Take rava in a blender jar.
  • Add salt, oil and blend it.
  • When rava gets well coated with oil, add maida and blend again.
  • Add water and blend everything once more. The mixture should come together nicely like dough.
  • Transfer the dough into a dish.
  • Knead the dough once to make it smooth and even.
  • Cover and rest the dough for about 15-20 minutes.
  • Take potatoes in a bowl.
  • Add red chili powder, coriander powder, garam masala, cumin powder, chat masala, salt, coriander leaves and mix everything together.
  • You can do variations in this stuffing according to your choice and taste.
  • Stuffing is all ready.
  • Take the dough and knead it once more.
  • Take small portion from it and make it smooth and even.
  • Roll it into pari neither too thick nor too thin. The pari should be of medium thickness.
  • Fill the stuffing and close it up. Seal the edges well.
  • You can spread a little water along the edges if you want.
  • Make a design along the edge with a fork.
  • Heat up oil in a pan.
  • Drop karanji in hot oil and fry it well on low to medium heat from both sides.
  • When lower side gets nice golden color flip the karanji over and fry from other side too.
  • When karanji gets nice golden color from both sides, take it out, drain excess oil and transfer it into a dish.
  • Karanji is all ready.
  • You can make about 10-12 karanjya from the proportion we used.
