Ingredients

  • 1 cup Rava / Sooji
  • 1 cup Curd
  • 1/4 cup Water
  • 1/4 cup Besan
  • Grated Carrot
  • Finely chopped Capsicum
  • Finely chopped Spinach
  • Roasted Peanuts
  • Ginger-Green chilli paste (3~4 Green chilies & 1/2” Ginger)
  • 1/2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • Salt to taste
  • 1 tsp Eno fruit salt
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tap Cumin seeds
  • Curry leaves
  • White sesame seeds

Instructions

  • Take rava in a bowl. You can use any type of rava that is fine or coarse.
  • Add curd and mix well. You can add 1 1/2-2 cups buttermilk in place of curd.
  • Add water to adjust the consistency and mix well.
  • Add besan and mix well.
  • Add carrot, capsicum, spinach and mix well. You can add veggies of your choice.
  • Add roasted peanuts, ginger-green chili paste, coriander powder, turmeric powder, red chilli powder and mix well.
  • You can add cashew nuts or almonds in place of peanuts.
  • Add salt and mix well.
  • Cover and rest the mixture for about 10 minutes.
  • You can keep this mixture ready previous night and store it in freeze or room temperature too. Next morning make handvo.
  • Add eno fruit salt and mix well.
  • You can add 1/2 tsp baking soda in place of Eno.
  • Heat up oil in a pan.
  • Add mustard seeds and let it pop up.
  • Add cumin seeds, curry leaves and turn off the gas or turn the heat to low.
  • Add sesame seeds and the batter.
  • Spread the batter well.
  • Cover and cook on very low heat for about 10-11 minutes until the lower side turns nice and crispy and becomes kharpus.
  • Open the lid and check the lower side for nice golden color.
  • Turn off the gas and flip the handvo over into a dish.
  • Take the remaining tadka out on the handvo.
  • Again heat up oil in the pan.
  • Add mustard seeds and let it pop up.
  • Add cumin seeds, curry leaves, sesame seeds and transfer the handvo on the tadka.
  • Cook until other side also gets nice golden color and becomes kharpus. No need to cover.
  • Turn off the gas and transfer the handvo into a dish.
  • Handvo is all ready. Cut and serve.
