Summer is the season for valvan recipes. Our moms, grannies used to make different types of papad, kuradaya, masale, pickles and what not!! There are a lot fond memories of helping them when we were in school. Today here is such a recipe. Jwariche papad. This is not a traditional recipe but we are making them form jawar flour. Ingredients

  • 1 cup Jawar flour
  • 2 cups Water
  • 4 cups Water
  • Salt to taste
  • 1/4 tsp Baking soda
  • 1 tsp Papad khar
  • 2 tbsp white Sesame seeds
  • Cumin seeds
  • 1 tsp Chili flakes

Instructions

  • In a bowl take jawar flour.
  • Add water to make paste and keep it aside.
  • Heat up water in a pan.
  • Add salt, baking soda, papad khar, sesame seeds and mix well.
  • Add jawar paste and mix continuously while adding.
  • Cook until it thickens up and gets nice glaze.
  • Stir continuously while cooking or jawar flour will settle at the bottom.
  • After cooking for about 10 minutes the mixture will thicken up and it will get nice glaze.
  • Turn off the gas and add cumin seeds, chili flakes and mix well.
  • You can add green chili paste or red chili paste in place of chili flakes.
  • Or you can completely skip it.
  • Take a plastic sheet.
  • You can use cotton cloth too.
  • You can grease steel plates with oil and make papad on it too.
  • Take a spoonful mixture and spread it evenly.
  • While making the papad, roll a little bigger as these shrink when these dry up.
  • Dry them under hot sun or in house too.
  • After drying for about 6-7 hours, when these are a little soft, flip them over.
  • When the edges of papad begin to leave the plastic, flip it over.
  • Don’t let it dry completely. Flip the papad over when these are a little wet.
  • When papad dry completely, store them in dry airtight container.
