Ingredients

  • 1 cup Rice (Basamati)
  • 1 cup finely chopped Onion
  • Few Cauliflower florets
  • 2~3 tsp Chopped Green beans
  • Chopped Carrot
  • Green peas
  • 1/2 tsp Cumin seeds
  • 4~5 Cloves
  • Black peppercorns
  • 2 Green cardamom
  • 2 chopped Green chilies
  • 1 tsp Ginger-Garlic paste
  • Salt to taste
  • Few Raisins
  • Few Cashew nuts
  • 2~3 Bay leaves
  • Ghee
  • 1 1/2 cup Water

Instructions

  • Wash rice really good with water 2-3 times.
  • Soak rice in enough water for about 30 minutes.
  • Heat up 2 tsp ghee in a pan.
  • When ghee is enough hot add cumin seeds and let it splutter.
  • Add bay leaves, cloves, peppercorns, green cardamom and fry for about a minute.
  • Add onion and fry it for about 4-5 minutes.
  • When onion gets light golden color add ginger-garlic paste, green chilies and mix well.
  • Fry it for about a minute.
  • Add veggies that are cauliflower, carrot, green beans and green peas.
  • Mix well and add a little about 2-3 tsp water.
  • Cover and cook on medium heat for about 4-5 minutes. Do not overcook the veggies.
  • Take the lid off and mix well.
  • Add soaked rice and water.
  • Mix well and add salt to taste, cashew nuts, raisins and mix well.
  • Add ghee. This is completely optional. You can skip ghee if you don’t want.
  • Cover and bring it to boil.
  • When rice begins to boil reduce the heat to low to medium and cook until all the water is absorbed in rice.
  • It takes about 7-8 minutes.
  • When all the water is almost absorbed reduce the heat to lowest possible setting and cook for about 15 minutes more.
  • Turn off the gas and remove the lid.
  • Mix pulao with the help of fork very carefully once.
  • If you leave the pulao as it is then after a while it will be sticky.
  • So separating the rice with fork is necessary.

Notes

  • If you don’t soak the rice for 30 minutes then add 2 cups water.
