Ingredients

  • 1 cup Chana dal
  • 3 cups Water
  • 1/4 tsp Turmeric powder
  • 1 cup Gudh
  • Cardamom powder
  • Nutmeg powder
  • 2 cups Maida
  • Salt to taste
  • Water
  • Oil

Instructions

  • Wash chana dal really good and soak it in enough water for at least 5-6 hours or overnight.
  • Transfer the soaked into the cooker and add water, turmeric powder.
  • Mix well and close the lid.
  • You can add about 1/2 tsp oil so that dal won’t spill out of the cooker.
  • Cook on medium heat until 4-5 whistles.
  • Drain the excess water from the dal. You can use this water to make katachi amti.
  • Transfer the dal into a pan and mash it really good with a potato masher.
  • Add gudh and mix well.
  • Cook on medium heat until the gudh melts.
  • Continue cooking further for about 8-10 minutes until Puran thickens up.
  • Stir continuously while cooking.
  • The puran should not be too thick. It should be a little soft.
  • Add cardamom powder, nutmeg powder, and mix well.
  • Puran is all-ready.
  • In a dish take maida.
  • You can use 1 cup wheat flour and 1 cup maida or only wheat flour too.
  • Add salt and add a little water at a time to knead soft dough.
  • Add oil and knead it well until it doesn’t stick to hand.
  • Transfer the dough into a bowl, cover and rest it for at least 1-2 hours.
  • Take a small ball of puran and also take a small ball of dough.
  • Make the dough nice and smooth.
  • Spread the dough a little to make pari and stuff the puran in it.
  • Close the pari from all sides.
  • Remove the excess dough.
  • Spread oil all around the dough ball and put it on butter paper which is greased with oil.
  • You can use foil in place of butter paper.
  • Roll the dough ball into a round disc with hands first.
  • Spread oil on the rolling pin and roll the disc into thin poli.
  • Stretch the poli as much as you can.
  • Heat up a pan on low heat and spread oil on it.
  • Transfer the poli carefully on the pan and take the butter paper off.
  • When the poli dries well from one side flip it over.
  • You can spread oil along the edges if you want.
  • Brush oil on the upper surface of the poli and flip it over.
  • Roast well from another side as well.
  • Take the poli off into a dish.
  • Tel poli is all-ready.
  • You can have this poli with katachi amti.
