Shev or Sev can be a good snack choice during team time or as a topping for breakfast dishes like Poha or Upama. This is a basic version of Shev which is simple and easy to make.

Ingredients

  • 1 cup Besan / Chickpea Flour
  • 1/4 cup Rice Flour
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Salt
  • pinch of Baking Soda
  • 1/3 rd Cup Water

Instructions

Add besan, rice flour into mixing bowl.
To that add salt, turmeric powder, baking soda, and mix well.

  • Then add water to make it into a soft dough.
  • Cover and allow it to sit for 10 minutes.
  • Preheat oil for deep frying into the separate kadhai.
  • Now divide sev dough into two equal portions.
  • Prepare chakali mold by putting fine sev attachment in it.
  • Put sev dough in chakali mold.
  • Press the dough into hot oil in a circular motion.
  • Be sure the heat is on medium temperature.
  • Deep fry till it gets crisp.
  • Drain off all excess oil from sev.
  • Allow the sev to cool off, then store it into an airtight container.
  • It has a great shelf life, will stay good for 3 to 4 weeks.

Notes

  • Be sure you deep fry sev at low to medium high to retain its nice yellow color.
  • Be sure to make it in to soft dough, so that it would becomes easy to press down sev from chakali mould.
  • For flavoring use garlic powder, red chilli powder as per your choice.
