Satori is a traditional recipe. It tastes just awesome. It becomes nice and flaky. This is a little forgotten recipe. Let’s remember it. It is made with mawa or khoya stuffing. Ingredients

  • 1 cups Maida
  • 1/2 cup Rava
  • 1/4 tsp Salt
  • 4 tsp Ghee
  • Water
  • 3 tsp Ghee
  • 1/2 cup fine Rava / Sooji
  • 1/2 cup hot Milk
  • 1 1/2 cup Khoya / Mawa
  • 1 1/2 cup powdered Sugar
  • 1/2 tsp Cardamom powder
  • Ghee

Instructions

  • Take maida in a bowl.
  • Add rava, salt and mix well.
  • Add ghee and rub it well to the maida mixture.
  • You can use oil in place of ghee.
  • Add a little water at a time and knead medium consistency dough.
  • The dough should neither be too stiff nor too soft but of medium consistency.
  • Cover and rest the dough for about 30 minutes.
  • Add ghee in a pan.
  • Add rava and roast well on medium heat.
  • Add hot milk and mix well.
  • Add khoya and mix well.
  • Fry for about 2-3 minutes.
  • Cover and keep it aside for about 10 minutes for resting.
  • Add powdered sugar, cardamom powder and mix everything well together.
  • Stuffing is all ready.
  • Take the dough and knead it once more to make it even.
  • Take a small portion of the dough and make it smooth and even.
  • Roll it into a small puri.
  • Try to roll it thick at the center and the edges thin.
  • Fill the stiffing and close it up.
  • Remove the excess dough.
  • Roll it into a small a little thick puri again carefully. It should not open up.
  • Heat up a pan on medium heat.
  • Add ghee and satori on it.
  • Roast well from both sides.
  • Spread a little ghee on upper side and flip it over.
  • Roast it well form both side until it gets nice golden color from both sides.
  • Take it off into a plate and satori is all ready.
  • You can make 18 medium size satori from the ingredients we used.
