Nankhatai are eggless cookies. You can prepare nankhatai easily at home. It is a very good tea time cookie and loved by all. Nanakhatai is generally baked in microwave oven. But we are making nankhatai in pressure cooker. So let’s make pressure cooker nankhatai.

Ingredients

  • Salt for layering the cooker
  • 1/4 cup Ghee
  • 1/2 cup Powdered sugar
  • 2-3 drops Vanilla essence
  • 1 cup Maida
  • 1/4 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp Milk
  • Few Almonds

Instructions

  • For preheating pressure cooker, make a thin layer of salt at the bottom of pressure cooker.
  • You can use baking soda instead of salt.
  • Put a pot on the salt layer and cover it with glass lid.
  • You can use stainless steel dish instead of glass lid.
  • Preheat the cooker on medium heat.
  • In a bowl, take ghee. Add powdered sugar.
  • You can use butter instead of ghee. Use 1/2 cup soft butter. You can use vanaspati ghee too.
  • Beat the ghee and sugar really good until it becomes light and fluffy.
  • Add vanilla essence. If you are using vanilla extract, use 1 tsp extract.
  • If you don’t have vanilla essence or extract, you can use cardamom powder or nutmeg powder. Mix well.
  • Add maida, baking powder and baking soda. Mix well again.
  • Add milk. Add less than 1 tsp milk first and if you feel. Knead it into a bit thick dough.
  • Make small nankhatai out of it and garnish with your choice of dry fruit. Put the nankhatai in a dish.
  • You can use almonds, pistachios or tutti frutti.
  • Keep a gap of 2-2 1/2” gap between 2 nankhatais.
  • Place the dish in the preheated cooker. Cover and bake on medium heat for about 10-12 minutes.
  • Bake for 10 minutes and then turn off the gas.
  • If you want to bake the nankhatai in oven, bake on 180 Deg C for 10-12 minutes.
  • Let the cookies be in the cooker for 5 more minutes.
  • Take the nankhatai out and let them cool down for atleast 15 minutes.
  • If you try to take them while hot they may break. As they are soft when hot.
  • You can prepare 12 medium size nankhatai from 1 cup maida.
