Ingredients

  • 1 cup Soya chunks
  • 1 Cinnamon stick
  • 4~5 Black peppercorns
  • Cloves
  • Bay leaves
  • A little salt
  • Oil
  • 1 big sliced Onion
  • 1 finely chopped Tomato
  • 3 tsp Melon seeds
  • 4 tsp Oil
  • 1 tsp Ginger-Garlic paste
  • 1/4 tsp Turmeric powder
  • 1 tsp Garam masala
  • 1 tsp Coriander powder
  • 1 1/2 tsp Red chilli powder
  • Hot Water
  • Salt to taste
  • 1 tsp Kasuri methi

Instructions

  • Heat up water in a pan.
  • Add soya chunks, black peppercorns, cloves, bay leaves and a little salt.
  • Cover and cook on medium heat for about 8-10 minutes.
  • Turn off the gas and strain the excess water into a bowl.
  • No need to squeeze water from the soya chunks.
  • Heat up oil in a pan.
  • Add sliced onion and fry until onion gets a light golden color.
  • Add tomato, melon seeds, and fry for about another 3-4 minutes.
  • You can add cashew nuts or almonds in place of melon seeds.
  • When the tomato cooks nice and soft turn off the gas and lets the mixture cool down.
  • Transfer the mixture into a blender jar and blend into a fine puree.
  • No need to add water or use minimum water while blending the masala.
  • Heat up oil in a pan. Add the blended masala and fry for about 3-4 minutes.
  • Add ginger-garlic paste, turmeric powder, garam masala, coriander powder, red chilli powder, and mix well.
  • Fry the masala for about 2-3 minutes until spices release oil.
  • Add hot water and mix well.
  • Do not add more water as soya chunks already have water which will be released on adding.
  • Add salt and mix well. Add salt carefully as we already have added salt while cooking soya chunks.
  • Add cooked soya chunks and mix well.
  • Add Kasuri methi and mix well.
  • Cover and cook on medium heat for about 7-8 minutes.
  • Soya chunks masala is already.
